Production Information
Fruit was sourced from Justin Ardill's easterly facing vineyard situated in the famed Watervale sub-region at the southern end of the Clare Valley. Mature vines grow on a soil of red clay and limestone and a moderate season combined to ensure that the yields were very low and fruit concentrated, despite the threat of bushfires.
Vinification, as one might expect with good fruit, is very simple - the grapes are picked in the cool of the morning and rapidly transported to the winery where they are lightly crushed and sent to press. Only the purest, free-run juice is retained and fermented at a cool temperature in stainless steel to retain fruit profile, with the finished wine being aged on its lees for 2-3 months before bottling.
