Gentle pneumatic pressing. Strict cold settling at 10°C for 48 hours before alcoholic fermentation in stainless steel tanks for 15 days at temperatures of 18° to 20°C. No malolactic fermentation to preserve the freshness and primary fruit aromas. 3 months ageing in stainless steel vats.
