Bright yellow colour with greenish reflections. Delicate hints of apple, citrus and nuances of white fruits. Fresh and salty, with a long and elegant finish.
Vinification
Harvest in the early hours of the dawn so as to preserve the aromas and a subsequent soft pressing of the skins. Fermentation of the must with selected yeasts at a controlled temperature of 13 ° for 10 days
Maturation
3 months in stainless steel tank
Food Pairing
dishes based on fish, shellfish and seafood, typical of Salento region. Also excellent on its own, as an aperitif or with appetisers based on delicate cheeses, unseasoned cured meats and vegetables.
