Barbadillo is one of the great names of the Sherry Triangle, based in Sanlúcar de Barrameda and tracing its roots back to 1821. "Toto" is the winery's flagship traditional-method sparkling wine, made mainly from Palomino Fino grown on the region's famous white albariza soil, with a splash of Chardonnay. The grapes are hand-harvested, fermented in stainless steel, then undergo a second fermentation in bottle and around 20 months on lees before disgorgement — giving the wine real depth for the style.
Tasting Notes Pale golden yellow with a fine, persistent bead. The nose is fresh and yeasty, with notes of white flowers and brioche. On the palate it's bone dry but not austere, with crisp orchard fruit — think green apple — carried by the chalky minerality the albariza soils are known for. Elegant, saline and refreshing.
