First fill Pedro Ximenez casks give a nose of dark fruits, almonds and vanilla you would expect from a sherry finish, brightened by hints of honeycomb and citrus peel. The palate is a symphony of sweet treats - fruit cake, digestive biscuits, honey and figs with a hint of chocolate and a long, peppered finish.
